La inocuidad de los alimentos es una característica cada vez más buscada y exigida por los consumidores. En un sentido amplio, se entiende por inocuidad asegurar que el alimento no va a causar daño al consumidor cuando sea preparado y/o ingerido de acuerdo con el uso previsto. El daño a la salud del consumidor puede ser causado por agentes biológicos (bacterias, virus), químicos (residuos) y/o físicos presentes en los alimentos.
En la cadena cárnica las bacterias son de especial preocupación, principalmente aquellas patogénicas como ser Escherichia coli O157:H7 por sus implicancias en la salud pública y en los mercados. A través del consumo de carne contaminada con dicha bacteria los seres humanos pueden manifestar diferentes sintomatologías, desde una diarrea leve hasta colitis hemorrágica y/o síndrome urémico hemolítico, siendo los niños la población
más susceptible. Desde mediados de esta década INIA viene desarrollando diversas acciones en el área de inocuidad de carnes (capacitación de recursos humanos, alianzas con instituciones de referencia a nivel nacional e internacional, investigación aplicada) con el objetivo de incrementar la competitividad de la cadena cárnica. En el presente artículo se mencionan muy brevemente los resultados obtenidos de la investigación a nivel del sector primario y se discuten las implicancias en el resto de la cadena. |

Resistance-breaking (RB) isolates of citrus tristeza virus (CTV) can replicate and move systemically in Poncirus trifoliata, a rootstock widely used for management of decline caused by CTV and other purposes. In Uruguay, severe CTV isolates are prevalent, and an RB isolate (designated as RB-UY1) was identified. In order to predict the implications of this genotype circulating in citrus crops grafted on trifoliate rootstocks, the aim of this work was to determine the biological and molecular characteristics of this isolate, the efficiency of its transmission by Toxoptera citricida, and its effects on plant growth performance of P. trifoliata. Our results show that RB-UY1 can be classified as a mild isolate, that it is phylogenetically associated with the RB1 group, and that it is efficiently transmitted by T. citrida. They also suggest that the RB-UY1 isolate should not affect the performance of citrus crops grafted on trifoliate rootstocks, although some growth parameters of P. trifoliata seedlings were affected four years after inoculation. © 2023, The Author(s), under exclusive licence to Springer-Verlag GmbH Austria, part of Springer Nature. |
